One of my favorite quick dinners are soups.

They are easy to make (I mean toss anything in your fridge) and they can be hearty enough for your dinner as long as you have a salad and some crusty bread.
And this Tuscan white bean soup tastes good in the spring, summer or fall.
This is a hearty soup that’s full of flavor and you know what? It’s ready in 30 minutes!
The creaminess is from blending white beans so it’s rich and satisfying without feeling heavy.
And the best part about this Tuscan white bean soup? There’s sausage! This instantly makes it a staple dinner for use.

What You Need

- Olive oil: It’s best to use olive oil for this soup.
- Onion: You can skip the onion if you’re sensitive to it (like my hubby is).
- Garlic: Just good flavor.
- Italian seasoning: Makes it feel authentic. You can swap this for tyme)
- Dried rosemary: Works great with beans.
- Low-sodium chicken broth: Can use regular vegetable broth or even vegetable broth if that’s all you have.
- White beans: Get them in a can so they are ready to eat. If you by dry there is more prep to get them ready for a soup.
- Salt and pepper: Ties everything together
- Grated Parmesan cheese: Adds a nice salty taste.
- Baby spinach or kale : All you need is a handful.
- Italian sausage: Brown it up and add it in for a more hearty soup.
How to Make It
Step 1: Over a large pot and medium heat, heat the olive oil. Then, add your chopped onion and cook about 3-4 minutes, until softened.
Step 3: Cut up your Italian sausage links and fry them up over medium high heat for a few minutes until cooked through. Place on a paper-towel-lined plate and pat the oil off.
Step 3: Next, go ahead and stir in your minced garlic (don’t skimp and use powder), the thyme, and rosemary. Cook for one minute.
Step 4: Next, it’s time to add the chicken broth and beans. Bring the soup to a simmer.
Step 5: Add salt, and pepper and simmer everything for about 5 minutes, then add your Parmesan cheese and stir until melted.
Step 6: Next addd spinach, and sausage, and cook for 2-3 minutes making sure everything is heated through.
Step 7: Taste and adjust seasoning as needed. Serve your soup warm with some crusty bread and a salad.
Italian Sausage Tuscan White Bean Soup
This 30-minute Tuscan white bean soup is so easy to make and you probably have most of the ingredients your pantry already!
You can even customize it by adding other hearty greens or meat to make it more of a dinner soup than a side soup.
Ingredients:
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon dried rosemary
- 4 cups low-sodium chicken broth
- 2 cans (15 oz) white beans, drained and rinsed
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach or kale
- 1/2 pound Italian sausage
Steps:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until softened, about 3-4 minutes.
- Stir in minced garlic, Italian seasoning, and rosemary. Cook for 1 more minute.
- At the same time, pre-cook your Italian sausage and set aside.
- Pour in chicken broth and add the beans. Bring to a simmer.
- Add salt, and pepper. Stir well and simmer for another 5 minutes.
- Stir in Parmesan cheese until melted and combined.
- Next, add spinach and sausage at this stage and cook for an additional 2-3 minutes until the greens are wilted or the sausage is heated through.
- Taste and adjust seasoning if needed. Serve warm.

Variations:
- Kale: For a healthier version, swap the spinach for kale.
- Carrots: For a more healthier option
- Chicken breast: Will still taste good!
