When school’s out and routines fly out the window, dinner time can start to feel like a bit of a circus.

So in the summertime, I’m always on the hunt for meals that are simple to make, get some veggies on the plate, and don’t lead to a sink full of chaos.

I also like family meals that feel laid-back but still look like I tried (at least a little).

Summer’s the perfect excuse to get creative with fresh ingredients and keep things fun.

I’ve pulled together some of my favorite dinner ideas that work for busy nights, hungry families, and those moments when you’re tempted to just serve cereal!

I throw everything onto one pan: chicken thighs, zucchini, cherry tomatoes, red onion, and whatever else is about to go soft in the fridge.

A little olive oil, garlic powder, and balsamic vinegar ties it all together.

It roasts in under 30 minutes and smells amazing halfway through.

I usually serve it with crusty bread or leftover rice.

Caprese Pasta with Rotisserie Chicken

This one’s a fridge-cleanout hero.

Toss cooked pasta with chunks of rotisserie chicken, cherry tomatoes, basil, and mini mozzarella balls.

A splash of balsamic glaze makes it feel fancier than it is.

This summer recipe is best served slightly warm so the cheese softens up just right.

15-Minute Shrimp Tacos

Marinade quick-cooking shrimp in some lime, garlic, and cumin before cooking it a hot pan.

Stack them in warm tortillas with shredded cabbage, sour cream, and avocado slices.

This is great for nights when no one can agree on what to eat!
