Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a small bowl, mix together the sugar and cinnamon. Brush both sides of each tortilla with melted butter and sprinkle generously with the cinnamon sugar.
Gently fold each tortilla in half and place them upright in the oven (you can drape them over two bars of your oven rack or tuck them into a muffin tin to hold the shape).
Bake for 8–10 minutes, or until the tortillas are golden and crisp. Let them cool just slightly so they hold their shape.
While the tortillas cool slightly, stir the diced apple into the warm applesauce so the chunks soften just a bit.
Spoon the warm, apple-packed sauce into each taco shell.
Add a drizzle of caramel or a dollop of whipped cream, then serve while they’re still warm and crisp.
